Lemon Berry Mini Muffins

These mini muffins combine oats and whole wheat flour for a slightly wholesome texture, while yogurt and a touch of oil keep them soft and moist. Fresh lemon zest and juice give a bright lift, and frozen wild blueberries add bursts of flavor. Instructions

  1. Place a rack in the center of the oven and preheat to 375°F (190°C).
  2. In a medium bowl, whisk the egg until combined. Add the rolled oats, yogurt, sugar, oil, lemon zest and juice, and vanilla extract. Stir until evenly mixed, then let the mixture rest for 10–15 minutes so the oats soften. This soaking time prevents a hard, chewy texture.
  3. Meanwhile, in a separate bowl, whisk together the white whole wheat flour, baking powder, and a pinch of salt until well blended.
  4. Pour the wet ingredients into the dry ingredients and fold together gently until just combined. Avoid overmixing to keep the muffins tender.
  5. Toss the frozen wild blueberries with 1 teaspoon of flour (this helps prevent them from sinking and bleeding into the batter). Fold the berries into the batter with a light hand.
  6. Line a mini muffin tin with paper liners or lightly grease the cups. Spoon the batter into the tin, filling each cup nearly to the top for full, rounded muffins.
  7. Bake at 375°F (190°C) for about 16–17 minutes, until the tops are lightly golden and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  8. Allow the mini muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Letting them fully cool improves texture and prevents sogginess when stored.

Recipe Notes

You can swap the white whole wheat flour for all-purpose flour if you prefer a slightly lighter crumb, but whole wheat adds a pleasant texture and a touch more nutrients. If using thawed berries, drain any excess liquid before tossing with flour. For a brighter citrus note, add a little extra lemon zest to the batter or sprinkle a tiny pinch of sugar on top before baking to create a subtle crust.

Storage and make-ahead tips: Store cooled muffins in an airtight container at room temperature for up to 3 days. For longer storage, freeze the cooled muffins in a sealed container or bag for up to 3 months; thaw overnight in the fridge or warm briefly before serving. These mini muffins travel well and are excellent for lunchboxes or quick snacks.

Variations: Swap in raspberries or chopped strawberries if you don’t have blueberries, or add a teaspoon of poppy seeds for classic lemon-poppy flavor. To reduce sweetness slightly, cut the sugar by a tablespoon or two according to your taste.
