Instructions
- In a small bowl whisk together 3 Tbsp tomato paste, 2 Tbsp olive oil, 2 Tbsp flax meal and ¼ cup water. Set aside to thicken slightly.
- Preheat the oven to 350°F (175°C). Line a rimmed baking sheet with unbleached parchment paper.
- Mash the chickpeas with a fork or potato masher until mostly broken down but still a bit textured. Stir in the tomato-flax mixture, ground oats, garlic, shallot, parsley, oregano, crushed red pepper, white pepper, and salt until well combined.
- Use a small scoop or tablespoon to portion the mixture into 30 small (or 18 large) balls onto the prepared pan. Wet your hands and roll each portion into a smooth ball.
- Bake for about 25–30 minutes, until firm and set. They should hold together and lightly brown.
- While meatballs bake, prepare the sauce: in a small saucepan whisk together ½ cup tomato paste, pineapple juice, lemon juice, maple syrup, arrowroot powder and ¼ teaspoon salt over medium heat.
