It takes far less oven space and cook time than a whole bird, so it’s perfect for small kitchens and apartment ovens. If you’re cooking for a larger crowd, making one or two extra boneless breasts alongside a whole turkey is a smart move—especially when guests prefer white meat.

The flavor comes from a simple dry rub of dried rosemary and thyme, lemon zest, salt, garlic powder, and freshly ground black pepper. The real secret is the low-and-slow roast: cooking at 300°F keeps the breast exceptionally moist. Because people often overcook turkey out of fear, the meat becomes dry — but roasting at a lower temperature and removing the breast when an instant-read thermometer reads about 163–165°F produces juicy, tender slices every time. The total roast time is still reasonable: expect about 1 hour 15 minutes to 1½ hours depending on size.

Quick note on thermometers: invest in a reliable instant-read thermometer. It removes guesswork and prevents overcooking. I use mine constantly—from poultry to pork, beef, and steaks. A thermometer that beeps at your target temperature is an especially handy kitchen tool.

Cooking a turkey breast instead of a whole bird saves time, fits in small ovens, and frees oven space for side dishes. This lemon-herb version is moist, aromatic, and easy to prepare.

Ingredients

  • 3 tablespoons olive oil, divided
  • 1½ teaspoons kosher salt
  • 1½ teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • Zest of 1 small lemon
  • 1 boneless turkey breast half (approximately 2 to 2½ pounds) with skin on
  • ½ cup chicken broth

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a small bowl, combine the kosher salt, dried thyme, dried rosemary, black pepper, garlic powder, and lemon zest.
  3. Gently loosen the skin on the turkey breast with your fingers. Rub the breast all over with 2 tablespoons of olive oil, working some oil under the skin. Rub 1 tablespoon of the seasoning mixture under the skin, then rub the remaining seasoning evenly over the outside of the breast.
  4. Shape the turkey breast into a compact roast by tucking the edges under. Use kitchen twine to tie the breast in a few loops, including one lengthwise, to maintain a cylindrical shape for even cooking.
  5. Place the turkey skin-side up in a small shallow roasting pan or baking dish (a cast iron skillet works well). Pour ½ cup chicken broth into the bottom of the pan to keep the environment moist while roasting.
  6. Roast for 1 hour 15 minutes to 1½ hours, depending on size. At about the 45-minute mark, baste the breast once by spooning pan juices over the top. Roast until an instant-read thermometer inserted into the thickest part of the breast reads 160°F; juices should run mostly clear with only a faint pink. The internal temperature will rise to about 165°F during resting, so remove the breast promptly to avoid overcooking.
  7. For crisp skin, turn the broiler on high and place the turkey under the broiler for 1–2 minutes until the skin is golden and crisp. Watch carefully to prevent burning.
  8. Transfer the turkey to a cutting board and tent loosely with foil. Let it rest for 15 minutes to allow the juices to redistribute.
  9. Remove the twine and slice the breast crosswise into ¼-inch-thick slices. Serve warm with pan juices or your preferred gravy and sides.

Tips: A boneless turkey breast is a great solution when oven space is limited or you want fewer leftovers. It’s also versatile—leftovers make excellent sandwiches, salads, and quick lunches. If you roast multiple breasts, stagger them so each reaches the ideal internal temperature without overcooking.
