  • 3 Tablespoons tomato paste
  • 2 Tablespoons olive oil

  • 15 oz can chickpeas, rinsed and drained
  • ½ cup ground oatmeal (old fashioned oats, pulsed)
  • 3 cloves garlic, pressed
  • 1 shallot, minced
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper
  • ½ teaspoon white pepper
  • ½ teaspoon coarse sea salt

  • ½ cup tomato paste
  • ⅓ cup pineapple juice
  • ⅓ cup lemon juice
  • ⅓ cup maple syrup
  • 2 Tablespoons arrowroot powder (or cornstarch)
  • ¼ teaspoon coarse sea salt

Instructions

  1. In a small bowl whisk together 3 Tbsp tomato paste, 2 Tbsp olive oil, 2 Tbsp flax meal and ¼ cup water. Set aside to thicken slightly.
  2. Preheat the oven to 350°F (175°C). Line a rimmed baking sheet with unbleached parchment paper.
  3. Mash the chickpeas with a fork or potato masher until mostly broken down but still a bit textured. Stir in the tomato-flax mixture, ground oats, garlic, shallot, parsley, oregano, crushed red pepper, white pepper, and salt until well combined.
  4. Use a small scoop or tablespoon to portion the mixture into 30 small (or 18 large) balls onto the prepared pan. Wet your hands and roll each portion into a smooth ball.
  5. Bake for about 25–30 minutes, until firm and set. They should hold together and lightly brown.
  6. While meatballs bake, prepare the sauce: in a small saucepan whisk together ½ cup tomato paste, pineapple juice, lemon juice, maple syrup, arrowroot powder and ¼ teaspoon salt over medium heat. Whisk as the sauce begins to thicken—this takes about 4–6 minutes. Avoid letting it boil vigorously; stir occasionally until smooth and glossy.
  7. When meatballs are done, add them to the sauce and simmer gently for about 5 minutes to coat and heat through. Serve warm with toothpicks for an appetizer, or over rice, cauliflower rice, zoodles or spaghetti squash for a main.
  8. Make ahead: store cooked meatballs (without sauce) in an airtight container in the refrigerator for up to one week, or freeze for up to three months. Thaw and reheat gently in sauce until warmed through.
