Ingredients

  • For the dough
  • 3/4 cup + 2 tbsp whole milk
  • 1 and 1/2 tbsp caster sugar
  • 1 and 1/4 tsp active dry yeast
  • 3 tbsp melted unsalted butter 40 g
  • 2 cups all-purpose flour plus extra for dusting
  • 1 tsp salt
  • For the apple filling
  • 2 apples peeled and diced
  • 1 tbsp unsalted butter
  • 1 tbsp caster sugar
  • Pinch cinnamon powder
  • Optional topping: 2 tbsp brown sugar + 1 tbsp unsalted butter

Instructions

  • Warm the milk and caster sugar together until comfortably warm (not hot). You should still be able to dip a finger in it. Stir in the active dry yeast, cover, and let rest for 5–10 minutes until frothy and the yeast has mostly dissolved.
  • In a mixing bowl (or the bowl of a stand mixer), add the melted butter and give it a quick stir. Pour in the frothy yeast mixture, then add the flour and salt. Bring the dough together and knead by hand or with a dough hook on low–medium speed until the dough is soft, smooth, and slightly sticky—about 10 minutes. You may need 2–3 tablespoons extra flour while kneading, but a little stickiness is fine. The dough is ready when it slowly springs back after a gentle poke.
  • Lightly oil a large bowl, place the dough inside, and turn to coat. Cover and let rise at room temperature for 1–2 hours, until doubled and puffy. This rise gives the rolls their soft texture, so don’t rush it.
  • While the dough rises, make the filling. Combine the diced apples, butter, caster sugar, and cinnamon in a small pan over low heat. Cook for 3–4 minutes until the apples soften and darken slightly but do not become mushy. Remove from heat and let cool.
  • Turn the risen dough onto a floured surface. Divide into 15 equal pieces. Flatten each piece to about 2–3 inches across, place roughly 2 teaspoons of the cooled apple filling in the center, then bring the edges up and pinch to seal. Avoid overfilling—too much filling makes sealing difficult and can cause splitting during the second rise. Reserve any leftover filling.
  • Place each sealed dough ball seam-side down in a greased 9″ round cake tin, arranging them close together so they touch. Cover and let rise again for about 1 hour, until the balls are puffy and nearly doubled.
  • Preheat the oven to 190°C (375°F). Tuck any leftover apple pieces into gaps between the balls to add extra gooey bites. Bake for 20 minutes, then check and bake an additional 5–10 minutes as needed until the rolls are a deep golden brown. Rotate the tin halfway through for even coloring.
  • If desired, brush the warm rolls with a little melted butter to soften the crust and add flavor.
  • To make the quick topping, melt the brown sugar and butter together and pour immediately over the hot rolls so the sugar remains glossy and pourable. Serve warm for the best texture and flavor.
  • Store leftover rolls in an airtight container at room temperature for one day, then refrigerate if your climate is warm. They keep for 4–5 days and can be reheated as needed.

Notes

If you prefer more caramel, use a thicker salted caramel sauce. The quick brown sugar topping works well for small batches but can crystallise quickly if made in larger quantities.
