Skip the grill and let your slow cooker do the work with this flavorful and effortless Crockpot BBQ Beef recipe. Tender, fall-apart beef in a tangy barbecue sauce makes a perfect filling for sandwiches, wraps, or simply a hearty bowl with a fork.

If you’re craving BBQ beef but don’t want to fire up the grill or spend a lot of time watching the stove, this slow cooker version is ideal. It requires minimal hands-on time and delivers rich, smoky flavor. Use it for sandwiches, sliders, tacos, or as a main dish alongside classic sides.
What Size Crockpot?
Choose a slow cooker size based on the roast you plan to use. This recipe is written for a 3–4 lb roast, so a 5-quart slow cooker is usually sufficient. If you use a larger roast or want to double the recipe, a 6-quart slow cooker is a better option. A programmable slow cooker is useful because it can switch to a warm setting when cooking finishes, keeping the beef ready to serve.
Can I make this Crockpot BBQ Beef ahead of time?

Yes—you can absolutely make this ahead. Prepare and cook the beef as directed, then let it cool slightly before storing in an airtight container in the refrigerator. Reheat gently in the slow cooker, on the stovetop, or in the microwave. Leftovers also freeze well in portioned containers or freezer bags for quick meals on busy days.
What to Serve with Crockpot Barbeque Beef?

This beef is delicious piled high on a soft roll or hoagie bun with pickles and extra barbecue sauce. It’s also excellent with classic sides such as baked beans, coleslaw, potato salad, or a crisp green salad. If you prefer a lighter meal, serve the shredded beef over rice or roasted vegetables.

Equipment
-
6 Qt Crockpot
Ingredients
- 3-4 lb Beef chuck roast or round roast
- 1 packet Onion soup mix
- 2 tablespoons Red wine vinegar
- 2 tablespoons Liquid smoke
- 2 cups Barbecue sauce
Instructions
-
Lightly coat the slow cooker liner with olive oil or nonstick cooking spray.
-
Place the beef roast in the crockpot with the fattier side up so the drippings baste the meat as it cooks. Rub the onion soup mix evenly over all sides of the roast. Pour the red wine vinegar and liquid smoke over the seasoned roast, then cover with the lid.
-
Cook on low for about 8 hours, or until the meat is fork-tender and easily pulls apart.
-
Remove the roast from the slow cooker and use two forks to shred the meat into bite-sized pieces.
-
Return the shredded beef to the slow cooker or a mixing bowl, add the barbecue sauce, and stir until the meat is fully coated. Taste and adjust seasoning if needed, then serve warm.

Tips and Variations
- For extra flavor, add a sliced onion or a few smashed garlic cloves to the slow cooker with the roast.
- If you prefer a spicier result, stir in a tablespoon of hot sauce or a pinch of cayenne to the barbecue sauce before tossing with the shredded beef.
- To reduce salt, choose a low-sodium onion soup mix and barbecue sauce, or rinse some of the cooking juices before combining with sauce.
- Make sandwiches with toasted rolls and add pickles, sliced red onion, or a scoop of coleslaw for contrast in texture and brightness.
