  • 1 lb Brussels sprouts
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • freshly cracked black pepper, to taste
  • 1/4 cup Pecorino Romano cheese, finely grated
  • 1 teaspoon fresh lemon zest
  • 1 teaspoon fresh thyme leaves, chopped
  • 1 tablespoon fresh Italian parsley, finely minced

Directions:

  1. Preheat the oven to 425°F (220°C). Trim the ends of the Brussels sprouts, remove any damaged outer leaves, and halve or quarter them depending on their size so pieces are a similar thickness.
  2. On a foil-lined sheet pan, toss the sprouts with olive oil, kosher salt, and freshly cracked black pepper. Spread them in a single layer so they roast rather than steam. Roast for about 25 minutes, or until the edges are crisp and nicely browned, shaking the pan once or twice for even browning.
