This version uses cashews coated in honey and seasoned with a Cajun spice mix, salt and black pepper. The honey caramelizes slightly as the nuts roast, creating a glossy, slightly sticky coating that hardens as the nuts cool. The result is a balanced snack with sweet, salty and smoky-spicy notes.
What equipment do I need?
You only need basic equipment: a baking tray or cookie sheet, a piece of parchment paper and an oven preheated to 350°F (180°C). If you prefer, these can also be made in an air fryer—adjust the cooking time and keep an eye on the nuts so they don’t burn.
Preparation is fast—just mix the nuts with honey and spices, spread them on the lined tray and bake for around 10 minutes. Because it takes only minutes to prepare, it’s convenient to pop them in the oven while other dishes are cooking.
Storing these nuts
Store cooled nuts in an airtight container at room temperature. The honey coating may make the nuts stick together at first; once fully cool the coating firms up and they separate more easily. Stored properly they should remain fresh for at least a week or two—though they rarely last that long in my kitchen!

Can I use other nuts and seasonings?
Absolutely. The method is the same for other nuts—peanuts, walnuts, pecans or a mix. For a sweeter profile, use only honey and cinnamon. For a sweet-and-salty snack, add up to 1/2 teaspoon extra salt. Experiment with spices such as smoked paprika, curry powder or a bay seasoning blend to create different flavor combinations. You can even divide a single batch and make two or three different seasonings at once.

Instructions
1. Preheat the oven to 350°F (180°C).
2. Line a baking tray with parchment paper.
3. Place the cashews into a mixing bowl.
4. Drizzle the honey over the nuts, then sprinkle the Cajun spice, salt and black pepper. Stir well so the nuts are evenly coated.

5. Spread the nuts in a single layer on the prepared baking tray.

6. Bake for about 10 minutes, or until the cashews turn golden brown. Ovens vary, so check after 8 minutes and stir gently if needed to prevent burning.
7. Remove the tray from the oven and let the nuts cool on the tray. The honey coating will make them slightly sticky while warm; they firm up as they cool.

TIP: If the nuts clump together in the container, secure the lid and give it a good shake—the pieces will separate once the coating has set.
