Overnight in early August it seemed like everyone was experimenting with chaffles. Mini waffle makers sold out and low-carb recipe feeds filled with creative chaffle ideas.

To improve texture and reduce the eggy flavor, Joanie adds a tablespoon of blanched almond flour and a pinch (1/4 teaspoon) of baking powder to the base mix. Those tiny additions create a crisper exterior and a lighter waffle-like interior while keeping the recipe low in carbs. From here it’s easy to adapt the batter for sweet or savory variations — a touch of sweetener, vanilla and cinnamon for a dessert chaffle, or herbs and spices for savory breakfast options.

Ingredients

  • Chaffle
  • 1 egg, beaten
  • 1/2 cup cheddar cheese, grated
  • 1 tablespoon blanched almond flour
  • 1/4 teaspoon baking powder
  • BLT with Avocado
  • 3 strips bacon, cooked
  • 1 piece Bibb lettuce
  • 1 slice fresh tomato
  • 1/4 avocado, thinly sliced (or a spoonful of guacamole)

Instructions

  • Chaffle
  • Preheat a mini waffle maker and lightly spray the plates with non-stick spray.
  • In a small bowl, whisk the egg with the shredded cheese, almond flour and baking powder. You can also blend briefly for a smooth batter.
  • Pour a portion of batter into the center of the heated waffle maker and spread gently toward the edges. Close the lid and cook about 3½ minutes, or until the chaffle is golden and crisp.
  • Remove and cool on a rack for a couple of minutes. Repeat to make a second chaffle.
  • BLT with Avocado
  • Place a piece of Bibb lettuce, a tomato slice and bacon strips on one chaffle. Top with thinly sliced avocado or a dollop of guacamole, then set the second chaffle on top.
  • Serve immediately and enjoy.
