Zesty Lemon Lime Cake Recipe with Fresh Lime Whipped Cream

This normally isn’t my usual dessert direction, but this lemon-lime cake won me over. It’s bright, balanced and refreshingly simple—exactly the kind of fruit-forward dessert that feels right as the weather warms up.

I tend to reach for something rich and over-the-top for dessert, but this cake proves that lighter can still be indulgent. The crumb is tender and moist, and the citrus zest and juice give it a clean, lively flavor without being overly sweet.

To keep things fresh, I topped the cake with homemade lime whipped cream. The whipped cream gives a soft, cloud-like finish and a little tang from the lime zest that complements the cake perfectly. Because it’s whipped cream, I’ll semi-jokingly call it “healthy” — it’s dairy, so it must have some protein, right?

Lemon Lime Cake

Ingredients:

1 cup sugar

1/2 cup butter (softened)

2 eggs

1 1/2 teaspoons vanilla extract

1 tablespoon lime zest

1 tablespoon lemon zest

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 cup milk

3 tablespoons lemon and/or lime juice (I combined the lemon and lime juice into one bowl and got about 3 tablespoons)

Instructions:

Preheat the oven to 350°F (175°C). Grease an 8×8 or 9×9 inch square cake pan and set aside.

Cream the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla, lemon zest and lime zest until evenly distributed.

In a separate bowl, whisk together the flour and baking powder. Add the dry ingredients to the butter mixture and mix until just combined. Add the lemon and lime juice and mix thoroughly, then add the milk and beat gently until the batter is smooth. Avoid overmixing.

Pour the batter into the prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack before frosting.

Lime Whipped Cream

Ingredients:

1 pint cold heavy whipping cream

1/2 teaspoon vanilla extract

1 tablespoon lime zest

3 tablespoons powdered sugar

Instructions:

Chill a mixing bowl and whisk or beaters for best results. Add the cold cream, vanilla, powdered sugar and lime zest to the bowl. Whip on medium-high speed until soft to medium peaks form, about 4–6 minutes depending on your mixer. Spread or pipe the whipped cream over the cooled cake and refrigerate until serving.

Variations and tips: swap part of the milk for plain yogurt for extra tang, or add a thin glaze of lemon-lime juice and powdered sugar for added shine. If you want a stronger citrus punch, increase the zest but keep the juice amount steady so the cake texture remains balanced.
