This vegetarian breakfast burrito features mushrooms and onions cooked in salsa for deep flavor, then filled with melty cheese, soft scrambled eggs, and creamy avocado. It’s easy to make in one pan and adapts well to extra vegetables or different cheeses.
Ingredients
- 1 tablespoon olive oil or butter
- ¼ large yellow or white onion, sliced
- 4 large white button or baby bella mushrooms, sliced
- 2 tablespoons salsa of choice
- ¼ cup shredded cheddar cheese (or Mexican blend)
- 1 large flour tortilla
- 2 large eggs
- ½ large Hass avocado, sliced
- Salt and pepper to taste
Instructions
- Slice the onion and mushrooms. Heat the olive oil or butter in a large nonstick pan over high heat. Add the sliced onion and mushrooms and cook until the mushrooms release their juices and the onions become translucent, about 5 minutes.

- Whisk the eggs in a bowl until smooth. Return the pan to medium-low heat, add a touch more oil or butter if needed, pour in the eggs, and gently push them with a spatula until soft-scrambled and just set.
- Arrange the mushroom and onion mixture across the center of the tortilla in a horizontal line, top with the soft scrambled eggs, then add avocado slices. Season with salt and pepper.
- Fold the sides of the tortilla in over the filling, then roll the side closest to you over the filling and tuck under as you continue rolling until sealed.
