This Cheesy Collard Greens Dip has become my go-to for parties and casual get-togethers. The collard greens bring a pleasant, slightly bitter depth that the cheeses mellow into something rich and comforting. Sweet bell pepper and onions add brightness while marinated artichokes provide a little tang—together they make a crowd-pleasing combination.

Cheesy Collard Greens Dip | Easy Step by Step
To prepare the greens, remove the stems and give the leaves a rough chop. Rinse thoroughly and drain well so they cook evenly.

Chop the onion, dice the bell pepper, drain and roughly chop the marinated artichokes, and mince the garlic.
Heat an ovenproof skillet over medium heat and melt the butter. Sauté the onions until translucent, then add the bell pepper and cook until softened. Add the garlic and cook briefly until fragrant.

Stir in the collard greens and cook just a few minutes until they wilt and soften. Season with a Cajun-style seasoning for a peppery kick if you like.

Add the chopped marinated artichokes and chopped fresh parsley, then remove the pan from the heat. Stir in the cream cheese, sour cream, and half of the parmesan until smooth and well combined. Top with the remaining parmesan and shredded mozzarella, then broil a few minutes until the top is golden and bubbly.

Cheesy Collard Greens Dip
Ingredients
- 2 Tbsp unsalted butter
- 1 bunch collard greens, stemmed and roughly chopped
- 1/2 onion, diced
- 1 small yellow bell pepper, diced
- 4 garlic cloves, minced
- 2 tsp Cajun seasoning (or to taste)
- 1 jar (6.5 oz) marinated artichokes, drained and chopped
- 1/4 cup fresh parsley, chopped
- 1 (8 oz) package cream cheese, room temperature
- 1/2 cup sour cream
- 1/2 cup grated Parmesan, divided
- 1/2 cup shredded mozzarella

Instructions
- Melt the butter in a cast iron or other ovenproof skillet over medium heat.
- Add the onions and cook until translucent, about 2 minutes.

- Top with the remaining Parmesan and the shredded mozzarella.
