Ingredients

  • 1 cup peanut butter*
  • 1 cup oats
  • 1/2 cup ground flaxseeds
  • 1/4 cup honey**
  • 1 tsp vanilla extract
  • a pinch of salt
  • 1/4 cup chopped chocolate (optional)

Instructions

  1. Put all ingredients into a mixing bowl and stir until everything is evenly combined. The mixture should be moist but not overly sticky. If it seems too dry, add a little more honey or a splash of water; if it’s too wet, add more oats or ground flax.
  2. Scoop the mixture with a small ice cream scoop or a spoon and roll into bite-sized balls with your hands. Press firmly to ensure they hold together.
  3. Place the balls on a plate or baking sheet and chill in the refrigerator for at least 10–15 minutes to firm up. Store in an airtight container in the refrigerator for up to a week.

*I usually use peanut butter made from just peanuts and salt. If your peanut butter is unsalted, add an extra pinch of salt to enhance the flavor. Results may vary if you use commercial peanut butter with added sugar and oil.

**You can substitute equal amounts of maple syrup or agave nectar for a different flavor or a vegan option. For variation, stir in chopped nuts, shredded coconut, or a few mini chocolate chips. If you plan to freeze the balls, flash-freeze them on a tray first, then transfer to a freezer-safe container for up to a month.
