Ingredients
- 1 cup quinoa uncooked
- 2.5 lbs cauliflower 1.1 kg – destemmed & chopped into 1 inch (2.5 cm) pieces
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- sea salt to taste
- freshly ground pepper to taste
- 15 oz. canned chickpeas 400 g can, drained
- 3 oz baby arugula (4 small handfuls) 85 g
Tahini Dressing
- ¼ cup tahini
- 1 tablespoon tamari
- ½ lemon juiced
- sea salt to taste
- ¼-2/3 cup filtered water
- freshly ground pepper to taste

Preheat the oven to 400°F (200°C).

Rinse the quinoa in a fine-mesh strainer under cool running water for at least 2 minutes. This removes any natural bitter or soapy residue.

Transfer the drained quinoa to a saucepan and add 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Turn off the heat and let the quinoa rest, covered, for 5 minutes. Fluff with a fork and set aside.

Line a baking sheet with foil or parchment. In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, a good pinch of sea salt, and freshly ground pepper until well coated.

Spread the cauliflower in a single layer on the baking sheet. Roast for 30–35 minutes, turning once if needed, until the edges are deeply browned and crisp. The caramelized bits add the best flavor.
