Moist Sourdough Carrot Cake with Cream Cheese Frosting

This sourdough carrot cake recipe is one of my favorites. It yields a wonderfully moist, tender cake packed with grated carrots, warm cinnamon, and finished with a smooth cream cheese frosting. Using sourdough starter or discard adds depth of flavor, extra moisture, and it reacts with baking soda to help the cake rise beautifully.

Sourdough carrot cake is an elegant twist on a classic dessert—perfect for holidays like Easter, family gatherings, or any day you want a comforting homemade treat. You can prepare the batter and bake it the same day (short fermentation) or let the batter ferment overnight in the refrigerator (long fermentation) for a slightly more developed flavor.

Sourdough Discard Carrot Cake Ingredients:

  • 2 cups all-purpose flour (substitute 1 cup whole wheat for a heartier loaf)
  • 2 teaspoons baking soda
  • 1 cup active sourdough starter (or sourdough discard)
  • 1/2 teaspoon fine salt
  • 1 tablespoon ground cinnamon
  • 1 cup olive oil (or vegetable oil or avocado oil)
  • 1 cup packed light or dark brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 3 cups grated carrots (about 5–6 medium carrots; freshly grated gives the best texture)
  • Optional: 1 cup chopped pecans (or walnuts)

Cream Cheese Frosting:

  • 16 ounces cream cheese, room temperature
  • 2 1/2 cups powdered sugar
  • 2/3 cup cold heavy whipping cream (or milk for a thinner frosting)
  • 1 teaspoon vanilla extract
  • Optional: extra pecans for decorating

Instructions

For the Cake

Preheat the oven to 350°F (175°C) and position a rack in the center. Grease and flour two 9-inch cake pans or line them with parchment.

Prepare the Carrots: Grate the carrots into a large mixing bowl. Freshly grated carrots give a finer texture than pre-shredded store-bought carrots.

Short Fermentation (Same-Day): Add all cake ingredients, including the baking soda, to the bowl with the grated carrots. Stir until well combined and no dry pockets of flour remain.

Long Fermentation (Optional): Combine all ingredients except the baking soda with the grated carrots. Mix thoroughly, cover, and refrigerate overnight. Before baking, stir in the baking soda and mix gently to distribute.

Divide the batter evenly between the prepared pans and smooth the tops. Bake at 350°F (175°C) for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

When the cakes are done, remove them from the oven and transfer them to a flat surface or wire rack placed briefly in the freezer. Cooling the pans on a cold surface stops the cooking quickly and helps lock in moisture. Allow the cakes to cool completely before frosting.

Cream Cheese Frosting

In a clean bowl, beat the softened cream cheese with the powdered sugar until smooth. Gradually add the cold heavy cream and vanilla, beating until the frosting reaches your desired consistency—add more cream for a softer frosting or less for a stiffer, pipeable texture.

Assembly

Place one cooled cake layer on a serving plate or cake stand and spread a generous layer of frosting over the top. Gently place the second layer on top and frost the top and sides of the cake. Smooth with a spatula and garnish with chopped or whole pecans, if desired.

Tips

  • For a richer flavor, use browned butter instead of oil—cool it slightly before adding to the batter.
  • Swap pecans for walnuts or almonds according to taste or availability.
  • If you don’t have heavy cream, use milk, but expect a slightly thinner frosting.
  • Avoid overmixing the batter; a few streaks of flour are fine and will keep the cake tender.

Notes

  • Freshly grated carrots yield the best texture. If using pre-shredded carrots, squeeze out excess moisture before adding them to the batter.
  • Use room-temperature eggs and cream cheese for easier, smoother mixing—about 30 minutes at room temperature is usually sufficient.
  • This recipe fits two 9-inch pans. If you only have one pan, bake in batches and increase baking time, checking doneness with a toothpick.
  • Try swapping half the all-purpose flour for whole wheat for a slightly heartier, more nutritious version.

Storing Leftover Sourdough Carrot Cake

Leftover sourdough carrot cake keeps well because of its moist crumb. To store:

  • Tightly wrap: Wrap cooled cake or slices in plastic wrap or aluminum foil.
  • Airtight container: For extra protection against drying, place wrapped pieces in an airtight container.
  • Room temperature or fridge: Store at room temperature up to 2 days, or refrigerate up to 5 days.
  • Freezing: For long-term storage, freeze wrapped cake for up to 3 months. Thaw overnight in the refrigerator before serving.
