Ingredients
- 4 cups blackberries or mixed berries (fresh or frozen)
- 1 TBS fresh lemon juice
- 1 large egg
- 1 cup granulated stevia or preferred granulated sweetener
- 2/3 cup almond flour (or gluten-free flour blend)
- 1/3 cup vital wheat gluten see notes for gluten-free substitute
- 6 TBS unsalted butter, melted
Sugar-Free Whipping Cream
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- 1/4 cup powdered erythritol or powdered sweetener of choice see notes for how to make powdered sweetener

Preheat the oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with cooking spray or a little butter.

Place the berries in the prepared dish. Pour the lemon juice over the fruit and gently toss to coat so the berries release a bit of their juice while baking.

In a medium bowl, whisk together the egg and granulated sweetener until combined. Add the almond flour and vital wheat gluten, stirring until the mixture is fully combined and has a crumbly, meal-like texture.

Evenly sprinkle the flour mixture over the berries. Drizzle the melted butter over the top, trying to distribute it as evenly as possible so the topping browns and becomes slightly crisp.

Bake for about 30–35 minutes, or until the topping is lightly golden and the filling is bubbly. If using frozen berries, you may need a few extra minutes. Keep an eye on the topping to avoid over-browning.

Remove from the oven and let the cobbler rest in the pan for at least 10 minutes to set. Serve warm with a dollop of sugar-free whipped cream or a scoop of low-carb ice cream if desired. Store any leftovers in an airtight container in the refrigerator.
For the Sugar-Free Whipping Cream

Chill a mixing bowl and whisk (or use a stand mixer). Pour in the heavy whipping cream, add the vanilla extract and powdered erythritol. Whisk on high for 4–5 minutes, or until firm peaks form and the cream holds its shape. Taste and adjust sweetness if needed.
Notes
Making powdered sweetener: To make powdered erythritol or powdered sweetener at home, combine 1/4 cup granulated stevia or preferred granulated sweetener with 1/4 teaspoon cornstarch in a small food processor. Pulse for 10–15 seconds or until the mixture becomes fine and powdery. Use immediately in the whipped cream or to dust the finished cobbler.
Storage and reheating: Cool leftovers completely, then store in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave for 20–40 seconds or warm in a 325°F oven until heated through. The topping will soften when refrigerated but can be refreshed briefly under the broiler if you prefer it crisper—watch closely to avoid burning.
Variations and tips: Use a combination of berries such as raspberries, blueberries, and blackberries for more depth of flavor. If you like a spiced note, add 1/4 teaspoon ground cinnamon or a pinch of nutmeg to the topping mixture. For a looser syrupy filling, sprinkle a touch more lemon juice or a tablespoon of water over frozen berries before baking. Adjust the sweetener to taste depending on how tart your fruit is.
