Hello everyone — today I’m sharing a wonderfully simple yet elegant dessert: Chocolate and Pear Shortcakes. If you love shortcakes but want something a little different from the usual strawberry version, this combination of rich cocoa shortcakes, tender caramelised pears, light whipped cream and a ribbon of milk chocolate is exactly the sort of comforting, impressive dessert you’ll return to again and again.

I’ve long experimented with shortcake flavours and chocolate with pear is one of my favorite pairings. The cocoa in the shortcakes gives a deep, slightly bitter base that balances the sweet pear filling and melted milk chocolate, while the whipped cream brings everything together with a soft, airy texture.

These shortcakes may involve several components, but each step is straightforward. The dough is forgiving and can look a little rustic — that’s part of its charm. The chocolate shortcakes are soft and slightly cakey thanks to added cream and a touch more sugar to keep the cocoa from making them dry. While the shortcakes bake and cool, you make the pear filling and whip the cream. Finally, melt a small amount of milk chocolate for a simple finishing drizzle.

Ingredients

  • For the shortcakes:
  • 2 1/4 cups (315g) plain/all-purpose flour
  • 1/2 cup (50g) cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda (baking soda)
  • Pinch of salt
  • 5 tbsp caster sugar
  • 1 stick (113g) unsalted butter, cold and cut into cubes
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 cup (240ml) double/heavy cream (you may not need the whole cup — start with 3/4 cup and add the remaining as needed)
  • For the filling and topping:
  • 4 large pears, peeled, cored and sliced thinly
  • 1/3 cup (66g) light brown sugar
  • 1 tbsp cornflour/cornstarch
  • 4–5 tbsp water
  • 3/4 cup (180ml) double/heavy cream
  • 2 tbsp caster sugar
  • 3 oz (85g) milk chocolate

Instructions

  1. Preheat the oven to 200°C / 400°F. Line a baking tray with greaseproof paper or a silicone mat.
  2. In a large bowl, combine the flour, cocoa powder, baking powder, bicarbonate of soda, salt, caster sugar and cold cubed butter. Rub the butter into the dry ingredients with a pastry cutter or your fingertips until the mixture resembles coarse breadcrumbs.
  3. Add the egg, vanilla and 3/4 cup of the cream. Stir with a wooden spoon until the dough begins to come together in a single lump. If it remains too crumbly, add the remaining 1/4 cup of cream a tablespoon at a time until it holds together. The dough should be slightly sticky but not wet; a little crumbliness is fine.
  4. Divide the dough into eight roughly equal portions and shape each into a ball. Place them on the lined tray about 2 inches apart and gently flatten each ball into a rough round.
  5. Bake for 12–15 minutes, until the shortcakes have risen, the tops look matte and they feel firm but slightly springy. Allow them to cool completely on the tray.
  6. While the shortcakes cool, make the pear filling: place the pear slices, brown sugar, cornflour and 4 tablespoons of water into a medium saucepan over low heat. Bring to a simmer, stirring frequently, and cook until the pear slices are tender and the sauce has thickened and turned slightly caramel in color. If the mixture thickens before the pears are fully cooked, add the extra tablespoon of water.
  7. Let the pear mixture cool to room temperature. Whisk the 3/4 cup cream with 2 tablespoons caster sugar until it reaches soft-to-medium peaks — light, fluffy and still spreadable.
  8. Melt the milk chocolate in a heatproof bowl in short bursts in the microwave (20 seconds at a time), stirring between intervals until smooth. Transfer the melted chocolate to a small resealable bag and snip a tiny corner for drizzling.
  9. To assemble: slice each shortcake horizontally. Spoon about 1 1/2 tbsp whipped cream onto the base and spread evenly. Add about 1 1/2 tbsp of the pear mixture on top of the cream. Drizzle melted chocolate over the pears, place the shortcake lid on top and finish with another chocolate drizzle. Serve immediately.
  10. Storage: keep components separate. Shortcakes stored in an airtight container at room temperature will keep up to 3 days. Store the whipped cream and pears covered in the fridge and do not melt the chocolate until you are ready to assemble.

Tips and variations: use ripe but firm pears so slices hold their shape during cooking; replace milk chocolate with dark chocolate if you prefer less sweetness; for a boozy note, splash a teaspoon of pear brandy or Amaretto into the pear mixture once cooled. These shortcakes are forgiving and adaptable — rustic shapes and small imperfections only add to their homemade charm.
