The Best White Chicken Enchiladas

If you think white chicken enchiladas are bland, try this version. These green chile chicken enchiladas use a rich, flavorful white enchilada sauce built from a butter-flour roux, garlic, green chiles, chicken stock, sour cream, and plenty of shredded cheese. The seasoning blend and a splash of hot sauce and lime perk up shredded rotisserie chicken so every bite is bright and satisfying. This recipe is simple to execute yet tastes elevated—perfect for weeknight dinners, casual entertaining, or meal prep.

The creamy sauce keeps the tortillas tender and adds a tangy, slightly spicy finish from the green chiles and pepper jack. Because the sauce is homemade, you can control the heat and texture to suit your family’s preferences.

Key Ingredients

Shredded chicken – Rotisserie chicken makes this recipe fast and flavorful. Toss the meat with lime, hot sauce, and seasonings for extra brightness.

Seasoning mix – A simple blend of cumin, chili powder, paprika, onion powder, garlic powder, and a touch of adobo or all-purpose seasoning adds depth without overpowering the sauce.

Flour tortillas – Eight-inch flour tortillas are recommended for soft, tender enchiladas. Corn tortillas can be used if you prefer a firmer texture; warm them before rolling so they don’t crack.

Diced green chiles – Use hot or mild Hatch green chiles depending on your heat tolerance. Leave them undrained for extra sauce flavor.

Cheese – A blend of Monterey Jack and pepper jack melts beautifully and adds a mild creaminess with a touch of spice. Freshly shredded cheese is best for smooth melting.

Roux base – Butter, garlic, and flour form the sauce base. Chicken stock thins the roux into a silky sauce that becomes the vehicle for sour cream and cheese.

Sour cream – Adds tang and creaminess, balancing the chiles and seasoning to make a luscious enchilada sauce.

How to Make Green Chile Chicken Enchiladas

Preheat the oven to 350°F and grease a 9×13 casserole dish. Combine the seasoning blend in a small bowl. Shred the Monterey Jack and pepper jack cheeses and combine.

In a medium bowl, mix the shredded chicken with lime juice, hot sauce, and half of the seasoning blend. Stir in 1 cup of the cheese so the filling is cohesive and flavorful.

For the sauce: melt the butter in a saucepan over medium-low heat. Add the garlic and cook briefly until fragrant, then whisk in the flour and stir for about two minutes to cook out the raw flour taste. Slowly pour in the chicken stock while whisking to avoid lumps. Bring the mixture to a gentle simmer, then stir in the remaining seasoning and the undrained diced green chiles. When the sauce begins to thicken, remove it from the heat and whisk in the sour cream until smooth. Stir in half of the remaining cheese until fully melted and incorporated.

Spread about 1/3 cup of sauce across the bottom of the prepared baking dish. Spoon roughly 1/3 cup of the chicken mixture into the lower half of each tortilla, roll tightly, and arrange seam-side down in the pan. Repeat with remaining tortillas. Pour the remaining sauce across the filled enchiladas; they will absorb liquid as they bake, so don’t be shy with the sauce.

Sprinkle the final cup of cheese evenly over the enchiladas. Bake uncovered at 350°F for 20 minutes, until bubbly and heated through. If you want a browned top, broil for 3–5 minutes, watching carefully so the cheese doesn’t burn.

Serving – Let the enchiladas rest for a few minutes before serving so the sauce sets slightly. Garnish with chopped cilantro, sliced green onions, or extra sour cream if desired.

Tip – If you prefer firmer tortillas, use warmed corn tortillas. Heat them briefly in a dry skillet or microwave between damp towels before filling.

Can I Substitute Corn Tortillas?

Yes. Corn tortillas hold up differently than flour—they are less likely to become overly soft and can provide a more authentic texture. Warm them briefly before rolling to prevent cracking. Flour tortillas keep a softer, more delicate result; choose based on your preference.

The Best Chicken to Use

Rotisserie chicken is ideal for convenience and consistent tenderness. If you prefer to cook your own, poach boneless chicken breasts or tenders in water or chicken stock with a few aromatics, then shred. The quick seasoning and lime at the end will brighten the cooked meat.

How to Freeze Green Chile Chicken Enchiladas

These enchiladas freeze well and are excellent for meal prep. Option 1: Assemble the rolled enchiladas in the baking dish but hold off on adding the sauce. Wrap tightly and freeze; when ready to bake, thaw, make the sauce fresh, pour it over, and bake as directed. Option 2: Bake the casserole, cool completely, portion into airtight containers, and freeze. Thaw in the refrigerator overnight, cover with foil, and bake at 375°F for about 15 minutes; remove the foil and bake until heated through and bubbly, about 10 more minutes.

Creamy green chile enchiladas filled with seasoned rotisserie chicken, Monterey Jack and pepper jack cheeses, and baked until bubbly.

Ingredients

  • 2 1/2 cups shredded rotisserie chicken
  • 8 flour tortillas, taco-sized (8-inch)
  • Seasoning blend: 1 tsp each cumin, chili powder, paprika, onion powder, garlic powder; 1/2 tsp adobo
  • 2 teaspoons hot sauce (Valentina or similar)
  • Juice of 1/2 lime
  • 1 1/2 cups Monterey Jack cheese, shredded
  • 1 1/2 cups pepper jack cheese, shredded
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken stock
  • 4 oz can diced green chiles, undrained
  • 3/4 cup sour cream, at room temperature

Instructions

  1. Preheat oven to 350°F. Spray a 9×13 casserole dish with nonstick spray.
  2. Combine the seasoning blend in a small bowl. Shred both cheeses and mix together.
  3. In a medium bowl, combine shredded chicken, lime juice, hot sauce, and half the seasoning. Mix until evenly coated. Stir in 1 cup of the cheese.
  4. In a large saucepan over medium-low heat, melt the butter. Add garlic and cook about 1 minute until fragrant. Whisk in the flour and cook, stirring, for 2 minutes.
  5. Slowly pour in the chicken stock while whisking. Bring to a simmer, then add the remaining seasoning and the undrained green chiles. When the sauce begins to thicken, remove from heat and stir in the sour cream.
  6. Stir half of the remaining cheese into the sauce until melted. Spread about 1/3 cup of sauce in the bottom of the prepared dish.
  7. Spoon roughly 1/3 cup of the chicken filling into the lower half of each tortilla, roll tightly, and place seam-side down in the dish. Repeat with remaining tortillas.
  8. Pour the sauce over the enchiladas (they will absorb some during baking). Sprinkle the remaining 1 cup of cheese evenly on top.
  9. Bake uncovered for 20 minutes until bubbly. Optional: broil 3–5 minutes to brown the cheese, watching closely.

Notes

Do not overbake. Flour tortillas can become gummy if baked too long. If using corn tortillas, warm them before rolling to prevent tearing.
