Molasses cookies are a favorite during the holidays, and these Chewy Chai Molasses Cookies combine a soft, thick, chewy texture with warm, aromatic chai spices. “Chai” simply means tea in many parts of Asia and the Middle East, and the chai spice blend used here—cardamom, ginger, clove, cinnamon and nutmeg—adds depth and comfort to the cookies. The recipe uses light (fancy) molasses for sweetness and chewiness without the bitterness of blackstrap molasses. The dough is rich with butter and brown sugar, chilled briefly for best texture, then rolled in a spiced cinnamon sugar for a crackled, slightly crisp exterior. These cookies store well at room temperature and stay chewy for days—perfect for sharing with guests or serving alongside tea or coffee.

WHY THIS RECIPE WORKS
- Buttery flavor: The butter and brown sugar create a rich, toffee-like base that complements the molasses and spices.
- Chewy, tender texture: Molasses and brown sugar keep these cookies soft and chewy—texture that holds for several days when stored properly.
- Balanced chai spices: Cinnamon, ginger, cardamom, clove and nutmeg give the cookies a warmly spiced, aromatic profile.
- Spiced sugar coating: Rolling the dough in cinnamon-cardamom sugar creates a crackled top, a touch of crunch and extra spice on each bite.

INGREDIENTS FOR CHAI MOLASSES COOKIES
- Butter – Use unsalted or salted; if using salted butter, reduce the added salt by half.
- Brown sugar – This recipe uses packed brown sugar; its molasses content enhances chewiness and gives a rich, toffee-like taste.
- Vanilla – A small amount of pure vanilla rounds out the spices with a smooth background flavor.

- Molasses – Use light/fancy molasses for sweetness and a gentle molasses flavor. Avoid blackstrap molasses, which is much stronger and can darken the dough and affect spread.
- Chai spice blend – A combination of cinnamon, cardamom, ginger, clove and nutmeg provides the chai character.
- Cinnamon sugar – A mix of granulated sugar with cinnamon and a touch of cardamom gives the cookies a fragrant, crackled finish.
- Flour – Unbleached all-purpose flour yields the best chewy texture for these cookies.

STEP BY STEP INSTRUCTIONS
- 1. Cream butter and sugar. Beat softened butter with packed brown sugar until the mixture is smooth, creamy and slightly lightened in color—about 2 minutes on medium speed.
- 2. Add egg and molasses. Beat in the egg and vanilla until incorporated, then add the light molasses and mix until combined.
- 3. Combine dry ingredients. Whisk together flour, baking soda, salt and the chai spices. Add the dry mix to the butter mixture and fold gently until just incorporated—do not overmix.
- 4. Chill the dough. Wrap or cover the dough and refrigerate for 1–4 hours. Chilling improves texture and flavor; you can bake immediately if desired but chilled dough yields thicker, chewier cookies.
- 5. Prepare spiced sugar. Mix granulated sugar with cinnamon and a pinch of cardamom for rolling.
- 6. Shape and coat. Scoop dough into rounded mounds, roll into smooth balls, then roll evenly in the spiced sugar. Place balls on prepared baking sheets, leaving room to spread. Do not flatten.
- 7. Bake and cool. Bake at 350°F for 9–11 minutes until cookies are puffed and cracked and the edges are set. Let cookies rest on the baking sheet for 2 minutes, then transfer to a wire rack to finish cooling.

EXPERT BAKING TIPS
- Measure flour carefully. Too much flour dries the cookies and prevents proper spread—use a spoon-and-level or a kitchen scale.
- Chill the dough. Refrigeration helps prevent excessive spread and boosts chewiness and flavor.
- Choose the right molasses. Light (fancy) molasses works best here—blackstrap will be too intense.
- Keep the sugar coating. The exterior sugar helps the cookies form attractive cracks and retain moisture.
- Leave dough balls round. Don’t flatten before baking—round balls encourage a crackled top and even texture.

RECIPE FAQ
Can I use salted butter? Yes. If you use salted butter, halve the recipe’s added salt—for example, use 1/4 teaspoon instead of 1/2 teaspoon.
Is chilling required? Chilling is recommended for the best texture and flavor, but you can bake the cookies immediately. They will spread a bit more if unchilled.
How should I store them? Store cooled cookies in an airtight container at room temperature for up to one week to keep them soft and chewy.
Can I freeze cookies or dough? Yes. Fully baked cookies freeze well for up to three months in a resealable freezer bag. You can also freeze shaped dough balls on a tray until solid, transfer them to a bag, and bake from frozen—add 2–3 minutes to bake time.
