The galette is a classic French term for a free-form round or oval tart with a rustic, folded edge. Unlike a traditional pie, a galette embraces imperfection: a slightly uneven edge or a hand-folded crust only adds to its charm. What makes the galette so appealing is its versatility—you can fill it with sweet fruits, savory vegetables, cheeses, or a mixture of both. This recipe focuses on a bright, summer-ready triple berry galette that balances sweet and tart flavors with a hint of lime.
Proper dough thickness is important: if the pastry is rolled too thick, the crust may become gummy or chewy instead of tender and flaky. If it’s too thin, it won’t provide enough structure for the filling. Aim for a rustic, slightly imperfect look; a galette should feel homemade and inviting. This triple berry version is particularly satisfying because the combination of blueberries, blackberries, and strawberries gives a complex, fruity flavor. A touch of jam and a squeeze of lime lift the berries and add depth, especially when served warm with vanilla or butter pecan ice cream.
I will be sharing more galette recipes in upcoming posts, both sweet and savory. For now, this sweet triple berry version is ideal for summer gatherings or a simple weekend dessert. Its filling is juicy and fragrant, and the crust is flaky and buttery when prepared correctly. Below you’ll find a straightforward ingredient list and step-by-step instructions to make a beautiful and delicious galette at home.
Triple Berry Galette
Ingredients
-
1
Pie crust (store-bought) or homemade galette crust (see below)
Homemade Galette Crust
- 1 1/2 cups all-purpose flour
- 1 1/2 sticks cold unsalted butter, cut into pieces
- 1/4 tsp. salt
- 1 tbsp. sugar
- 1/3 cup ice cold water
Filling
- 1 tablespoon strawberry or raspberry jam
- 1 tablespoon all-purpose flour
- 1 tablespoon sugar
- 1 cup blueberries
- 1 cup blackberries
- 5-6 strawberries (or 1 cup raspberries, or a mix)
- 1/2 lime, juiced
Topping / Finishing
- 1 tablespoon butter, cut into small pieces
- 1 tablespoon sugar for sprinkling
Instructions
If using store-bought crust
- Defrost the crust overnight in the refrigerator, or leave it on the counter for about 30 minutes before using so it is pliable but still cold.
Make the homemade crust
- Combine the flour, salt, and sugar in a bowl. Rub the cold, diced butter into the dry ingredients with your fingertips until the mixture resembles coarse breadcrumbs. Add the ice-cold water a little at a time and bring the dough together into a single mass. Wrap in plastic and chill for about 30 minutes.
Roll and prepare
- Preheat the oven to 400°F (200°C). On a lightly floured surface, roll the chilled dough into a roughly 16-by-18-inch circle about 1/16 to 1/8 inch thick. Spread 1 tablespoon of jam over the center of the dough, leaving a 3–4 inch border.
- Transfer the dough to a greased and floured pie pan or onto a parchment-lined baking sheet. Sprinkle the jam layer with the tablespoon of flour and the tablespoon of sugar—this helps absorb juices so the bottom won’t become soggy and adds subtle sweetness.
Assemble the filling
- Gently wash and pat the berries dry. Combine blueberries, blackberries, and sliced strawberries (or raspberries) in a bowl with the juice of half a lime. Spoon the berries into the center of the dough over the jam and flour mixture, keeping the border free.
- Fold the edges of the dough inward over the fruit to create the characteristic galette rim. Dot the fruit with the small pieces of butter or scatter butter chunks evenly over the berries. Brush the exposed crust with melted butter or a beaten egg, then sprinkle the crust and fruit lightly with sugar.
Bake
- Bake on the middle rack for 45–50 minutes, or until the crust is golden and the filling is bubbling. Rotate the pan halfway through baking if your oven runs hot to ensure even color.
- Allow the galette to cool for 10–20 minutes before slicing. Serve warm with a scoop of vanilla or butter pecan ice cream, or a spoonful of whipped cream for a delightful contrast between warm filling and cool topping.
Tips & Variations
- If the edges brown too quickly, tent the galette loosely with foil for the final 10–15 minutes.
- Swap the jam flavor to match the fruit—peach or apricot jam also works well with mixed berries.
- Store leftovers covered in the refrigerator for up to 2 days. Reheat briefly in a warm oven to refresh the crust.
