Ingredients

  • ⅓ cup small tapioca pearls
  • 1 ⅔ cups almond milk, divided (or another non-dairy milk; use coconut milk for AIP)
  • ⅓–½ cup liquid sweetener, depending on how sweet you like it (I used maple syrup)
  • 2 tablespoons cocoa butter (white cocoa butter for the white chocolate flavor)
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • 1 cup raspberries (frozen works fine; fresh is also great)

Instructions

  1. Soak the tapioca pearls in 1 cup of the non-dairy milk for about 1 hour. This helps the pearls soften and cook evenly.
  2. Transfer the soaked tapioca and any remaining milk to a saucepan. Add the sweetener, vanilla, and a pinch of salt. Heat the mixture over medium heat, stirring occasionally until it comes to a gentle boil.
