What You Will Need

Salmon. Any cooking method works—grill, pan-sear, or bake. The baked herb salmon below is easy and yields tender, flavorful fish perfect for slicing into sliders.

Bacon. Thick-cut bacon crisped up adds savory crunch. Options like turkey bacon or vegan bacon can be used for different dietary needs.

Eggs. Prepare eggs to your liking—fried, poached, or scrambled all pair nicely with salmon and aioli.

Avocado Aioli. Homemade avocado basil aioli brightens the sliders with creaminess and fresh herb flavor. Recipe included below.

Vegetables. Fresh cucumbers, cherry tomatoes, tri-colored peppers, red onions, and fresh basil are great additions to the board.

Core ingredients (assemble as desired):

  • Cooked herb-roasted salmon, flaked or sliced
  • Dave’s Killer Bread Killer Classic English Muffins or your preferred English muffins
  • Sliced cucumbers
  • Sliced peppers
  • Cherry tomatoes, halved
  • Fresh basil leaves
  • Avocado basil aioli
  • Cooked eggs and crisp bacon (optional)

Baked Herb Salmon Recipe

Ingredients:

  • 2 lbs salmon fillet
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Old Bay seasoning (or preferred seafood seasoning)
  • 3–4 sprigs fresh rosemary
  • 3–4 sprigs fresh lemon-thyme or English thyme
  • 3–4 sprigs fresh savory
  • 6–8 large sweet basil leaves
  • Kosher salt and freshly cracked black pepper to taste

Directions:

  1. Preheat oven to 400°F (200°C).
  2. If the salmon is not completely fresh, rinse briefly under cold water and pat dry. Otherwise, no rinsing is necessary.
  3. Brush both sides of the salmon with olive oil, then season with Old Bay, kosher salt, and freshly cracked black pepper.
  4. Line a baking sheet with aluminum foil. Arrange rosemary, thyme, and savory sprigs on the foil. Place salmon skin-side down on top, then tuck basil and remaining herbs over the fillet.
  5. Bake on the middle rack for about 30–35 minutes, until the salmon flakes easily with a fork.
  6. Remove from oven and let rest briefly before flaking or slicing for sliders.

Avocado Basil Aioli

Avocado Basil Aioli

Ingredients:

  • 2 ripe avocados
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons sunflower oil or light extra virgin olive oil
  • 1/2 teaspoon chili-lime seasoning (or a pinch of cayenne and lime zest)
  • 1/3 cup mayonnaise
  • 5 large fresh basil leaves
  • Sea salt and freshly cracked black pepper to taste

Directions:

  1. Combine all ingredients in a food processor or blender and blend until smooth and creamy.
  2. Transfer to a container and refrigerate until ready to use. To prevent browning, press plastic wrap directly on the surface and store in the fridge for up to 2 days.
