Confession: I get a little proud when my meat-loving husband declares zucchini pizzas his favorite food and calls a sausage and cauliflower casserole “damn delicious.” That confidence led me to try to win him over to sweet potatoes with this Sloppy Joe version.

He loved the Sloppy Joe filling—unfortunately it didn’t make him love sweet potatoes. That just means more for me.
If you already enjoy sweet potatoes, this is a must-make. It’s filling, flavorful, and feels indulgent while staying nutritious. If you’re not a sweet potato fan, you can easily serve the Sloppy Joe mix over a regular baked potato or rice—equally delicious.

Sloppy Joe Stuffed Sweet Potatoes

Sloppy Joe–stuffed sweet potatoes are a crowd-pleasing dinner that puts a healthy spin on classic comfort food.

Ingredients
- 2 baked sweet potatoes
- 1 lb lean ground turkey or beef
- 1/4 onion, chopped
- 1 green pepper, chopped
- 1 clove garlic, minced
- 1/2 teaspoon chili powder
- 1/2 tablespoon ground cumin
- 1 tablespoon honey (or a bit more to taste)
- 14 oz diced tomatoes
- 6 oz tomato paste
- Shredded cheddar cheese (optional)
Instructions
- Heat a skillet and spray lightly with cooking spray. Sauté the chopped onion and green pepper until tender, about 4–5 minutes. Add the minced garlic and sauté for an additional minute.
- Add the ground meat to the skillet and cook until browned and cooked through, breaking it up with a spoon as it cooks.
- Stir in the chili powder, cumin, honey, diced tomatoes, and tomato paste. Mix well to combine all ingredients.
- Reduce heat to low and let the mixture simmer for 10–15 minutes to allow flavors to meld and the sauce to thicken slightly.
- Cut each baked sweet potato in half lengthwise and mash the flesh a little to form a shallow bowl. Spoon the Sloppy Joe mixture evenly over each sweet potato half.
- Top with shredded cheddar if desired, or serve plain. Both ways are tasty.
Notes
Makes 4 servings — one quarter of the skillet mixture over half a sweet potato equals a single serving. For 21 Day Fix portioning, estimate: 1 yellow, 1 green, 1 red, and optional 1 blue per serving.
To make this vegetarian or vegan, swap the meat for cooked lentils or a plant-based ground alternative and adjust seasonings to taste. If you prefer a milder profile, reduce the chili powder and honey.
Leftovers store well in the refrigerator for 3–4 days and also freeze nicely for longer storage. Reheat gently on the stove or in the microwave.
