HOW TO MAKE CHICKPEA & MUSHROOM CURRY

CHICKPEA-CASHEW PASTE

  • Drain the soaked cashews and place them in a blender with cooked chickpeas, tomato paste and water. Blend until smooth and creamy. The paste should be pourable but thick enough to coat a spoon.
  • If you prefer, use an immersion blender and a tall container to achieve the same texture. Set the paste aside while you prepare the curry base.

CURRY

  • Heat olive oil in a large pot over medium heat. Add the chopped leeks and sliced mushrooms and cook, stirring frequently, for about 7–8 minutes until softened and beginning to brown.

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add sliced cremini mushrooms in a single layer and cook without moving them for 3–5 minutes so they brown on one side.
  • Stir and continue to cook 2–3 more minutes until golden all over. Season with a little salt and set aside as a topping.

HOW TO PAN-FRY CHICKPEAS

  • Heat 1 tablespoon of olive oil in a pan over medium heat.

Curry

  1. Heat 2 tablespoons of olive oil in a large pot. Add the chopped leeks and sliced mushrooms and cook for 7–8 minutes until soft and golden, stirring occasionally.
  2. Add the minced garlic, cubed smoked tofu and spices. Cook for about 1 minute until the spices are fragrant.
  3. Stir in the chickpea-cashew paste, 250 g cooked chickpeas and 200 ml water. Bring to a gentle simmer, season with salt, then reduce heat to low and simmer for 15 minutes, stirring occasionally, until the mushrooms are tender and the sauce has slightly thickened.
  4. Taste and adjust seasoning as needed.
